Curry Chicken with Thermomix (TM5)

So I finally tried cooking Curry Chicken with my German Husband (i.e. Thermomix TM5) in beginning of March, and decided to try to cook Curry Chicken. For someone who has never really cooked any serious meal, the prep work was overwhelming (as I am composing this blog post, I’ve already executed the recipe four times and it’s no longer a difficult task to me now).

The “Perfection with Thermomix in 7 Days” recipe booklet comes with 24 recipes, by the time you tried all of them you are pretty much done with studying the machine.

Curry Chicken recipe

It’s a bi-langual booklet and I’m somewhat glad that I read both of the languages to cross reference.

The english version of recipe helps to confirm only 3 garlic cloves are needed, instead of 3 whole garlic as suggested in Chinese version.
這個英文食譜最大的作用,就是確定了所需蒜頭是三瓣,不是中文版食譜裡說的三粒;另外就是食材名稱 – 如今雜貨店其實包裝上都沒有其中文名稱的,如,石谷仔是 candlenuts,黃薑 是 turmeric,南薑是 galangal⋯

這個食譜我瞪了一個月 🤣 不知道甚麼是石谷仔、黃薑和南薑。
黃薑(tumeric, kunyit) & 南薑(galangal, lengkuas),躲在我平時走過一千次也不曾留意到的地方。
I’ve visited Jaya Grocer like twice a week for at least 5 years now I’ve never notice these.
石谷仔 (candlenut, buah keras),陳列在我橫掃一千次也不會發現就是它的眼前。

新鮮咖喱葉。我走來走去好幾次都沒看見,後來跑去問在那裡上班的大姐,大姐二話不說直接走去取了一包給我。

So it’s RM0.50 for 25gram in 30 March 2019, I’ve just bought another packet yesterday (19th May 2019), and it’s RM0.70 already.
第一次买的时候是三月尾,那时的价钱是 RM0.50 (25克),昨天(五月中旬)去买时已经是 RM0.70 了(贸消部您可知道?)

I’ve also asked if it’s okay to cook with Olive Oil but Evonne shared that it might affect the taste of the smell of the finished product, she suggested to stick with using vegetable oil:

食谱建议使用植物油来煮这个咖喱鸡,而我家则只有橄榄油,我问了一下,答案是为了避免影响成品的味道,建议依照食谱使用植物油。

只要是植物油便可,以上是比较有经验的人的推荐。

辣椒干需去籽浸泡,香茅保留白色根部,咖喱叶得去梗取叶。

The dried chilies needs to be deseeded and soaked with water; use just the whiter part of lemongrass, and use only the leaves from curry leaves stalks.

光是準備以下食材就用掉好多光陰。重點是,很多食材買時一大包,但真正用上的量其實很少,比如黃薑南薑石谷仔香茅咖喱粉辣椒乾⋯ 😵 或許我該連接幾天都煮咖喱雞?
It took me a long time to get all these ready but I could do it alot quicker now after few practices, by the way you need to plan what are you gonna do with the leftover ingredients – I’ve kept them all in the fridge, some freezer; for powder, I stored them in vacuum sealed jars.

这个部分要额外提一下,因为食谱里面没有提到 – 香茅得先以 5 秒 sp5.5 打碎

This step is not mentioned in the recipe so do take note, you will need to smash the lemongrass with Thermomix first, set 5s/speed 5.5 to achieve that.

倒出备用,清洗主锅。
Pour it out for later use, wash the mixing bowl.

Step 1: Marinating the Chicken | 腌制鸡肉

Get 3 whole chicken and chop them into 3-4 smaller pieces each, marinate it with 20g curry powder and 2 teaspoons of salt for at least 30 minutes. In my second attempt onwards I’ve always marinate the chicken first and then move on to preparing the rest of the ingredients (deseed dried chillis and cut them into 5cm strips, peeling turmerics and galangal, garlics & unions, smashing lemongrasss etc).

将 3 只全鸡腿个别切成 3 至 4 小块,以 20克咖喱粉和 2 茶匙盐腌制至少 30 分钟。第一次跟这个食谱是我是把所有材料都处理好了才做这个部分,但第二次开始我就先将腌制鸡肉这个部分首先执行了才去处理其他,如将辣椒干去籽和剪成 5 公分条,将香茅打碎和为黄姜南姜蒜头小葱头去皮等等。

倒入雞 + 咖喱粉 + 鹽 👉🏻 關蓋 👉🏻 shake 均勻

Step 2: Cooking the Curry Paste | 烹煮咖喱酱料

蒜蔥辣椒乾黃薑南薑石谷仔+油+水
garlics, red unions, dried chili strips, turmerics, galangal, candlenuts, vegetable oils and water
20 秒/速度 10 搅碎成幼滑酱料
20 sec/speed 10 to get a smooth paste
用刮刀棒将锅边食材挂下
Scrape down sides of mixing bowl with spatula.
加入咖喱叶和香茅,以 8分钟 /120°C/速度 1 爆香。
Add curry leaves and lemongrass, sauté 8 min /120°C / speed 1

Step 3: Cooking Chicken with Potatoes | 烹煮鸡肉马铃薯

你做了那么多准备功夫为的就是这一刻,开始切入正题咯~

All of the above preparations are for this moment, let’s start cooking!

加入腌制好了的肌肉 | Add in marinated chicken
加入马铃薯
Add in cubed potatoes
加入100克的水,以 12分钟 / veroma / 翻转 / 汤匙速度烹煮。
Add 100g of water, cook 12 min / varoma / reverse / spoon speed.
鸡肉基本上都熟了,如果你不好椰浆,可以选择在这个步骤再煮个 2 分钟,否则继续。
The curry chicken is done, if you’d prefer your curry chicken serve without coconut milk, you could opt to cook for another 2 minutes then serve, otherwise, move on to the next step.
加入 200克的椰浆
Add 200g coconut milk
加入 1 茶匙的糖,以 2分钟 / Varoma / 翻转 / 速度汤匙 继续烹煮
Add 1 teaspoon of water, cook 2 min / Varoma / Reverse / Spoon Speed.

P/S Not everyone fancies coconut milk, some prefer lesser or none at all, if you’d like it to have smooth, milky texture you may consider adding some fresh milk, otherwise it’s fine to serve without milk too.

我觉得美善品多功能料理机厉害的地方是让我煮好不用擦灶炉,准备食材部分其实会花上许多时间,如果你平时是因为时间关系而没有做料理,你有了这个料理机也许会更忙,比如我就是一个实例:我本来的时间就已经不够用,本来就是因为没时间才不会上菜市、储存食物和处理食材,若非我的目的是决心要让家人吃得健康,我也不会入手这个料理机,所以心态要对,买料理机的目的不可以只是想省时间(它真的不会省多少时间啦),而是想要开始做居家料理也做好了准备会上菜市、会学储存、会处理食材,那这个料理机绝对能帮你快速成为“能煮”的人,只要紧随食谱,个人觉得料理煮失败率很低,还有,绝对要慎选支援对象,随便跟任何一个买的后果是你可能就会少了支援、鼓励和动力多加学习磨练,很可能就会玩票性煮几次就摆放厨房不用了,我本身不是美善品顾问,但我的支援团队挺靠谱,如果你已经想买,但害怕买了以后没有支援团队,那你可以联系我告诉我你的地理位置,我会依据你的地理位置推荐顾问。

Summary:

I think the beauty of Thermomix is that I can cook it without having to clean the cooking stove or mop the floor after cooking. I still take a lot of time to prepare the cooking materials so I didn’t think it’s for time-saving purpose. If you usually do not cook because you didn’t have the time, by having Thermomix at home might makes you busier – I’m a living proof: I’m naturally busy all the time – I never have time for wet or dry market, I didn’t have time to plan for food storage, neither do I have time to prepare the cooking materials, I got Thermomix to cook for my family, the objective isn’t really to save time (you will be disappointed), so you have to have your expectation set right. If your objective is to cut down on eating out and start cooking for the family and willing to spend time doing groceries shopping and processing food for cooking, then Thermomix will definitely help you to become a “cookable” person very quickly. As long as you follow the recipe the success rate is pretty high. On the side note though do also take into the consideration of whom you should buy Thermomix from, if you are not getting enough support on how to use Thermomix and have people sharing the recipes, you might end up not using it. I am not a Thermomix consultant so I can’t sell Thermomix to you, but my support team is fairly reliable in Malaysia, so if you are already thinking to get a Thermomix but not sure whom you should be purchasing from, you may give me a buzz and let me know where are you based, and I’ll recommend a qualified Thermomix consultant as per your location so you can get better support.
